Camping and Cooking (cont.)

Hello Hello! Last time we talked about how to use the same food items in different meals. Would you like to know the tricks? Here’s how!

Dinner night 1: Grilled steak or chicken.  Make sure you cook enough to have some leftovers.  Toss an extra potato in to bake as well.

 Breakfast Day 2:  Mash up that potato and fry it up for hash browns or potato cakes.  Use leftover vegetables from dinner the night before in your scrambled eggs.  Wrap those eggs in soft tortillas for a handheld on-the-go breakfast.  (And don’t worry, if you drop anything I will make sure it gets taken care of)

 Lunch Day 2:  Slice up grilled meat leftover from the night before and use in a sandwich or on top of greens for a salad. 

 Dinner night 2:  Fish Tacos!  Catfish is affordable, easy to grill and really a great fish for tacos.  Use those tortillas you brought for breakfast, add salsa, cheese and hot sauce and you are good to go. 

 Lunch Day 3:  Chop up that leftover catfish and make catfish sandwiches.  Better than tunafish sammies any day of the week in my humble canine opinion.

 Don’t forget the condiments – sour cream, mayo, ketchup, mustard, butter, salt and pepper are mainstays when cooking and camping.  Get yourself small containers for each and keep them in the door of your fridge in the RV.  Right next to my yummy marrow bone!

 All this food is making me hungry.  I am going to go dig up that pancake I buried last Sunday.  Until next time, I remain..
